Taiping Hou Kui are relatively recent teas as they have been developed for the 1915 Univeral Expo, but they have quickly become one of the most iconic and recognizable tea of China. Capitalizing on the exceptional size and aroma capacities of the leaves of a local varietal of tea trees growing around Taiping Lake, the hand rolling, pressing between two sieves and drying above bamboo charcoal embers provides long regular saber-shaped leaves marked by a fine grid pattern.
This complex process for a green tea bring the characteristics orchid fragrance of the Taiping Houkui, and this aromatic pattern rare among green tea has give birth to numerous legends.
